How to complete Gingerbread Architect
You're going from flat dough to a freestanding, fully edible house that holds its own shape. The real challenge is structural: getting walls that don't slump and a roof that doesn't slide, then decorating without it all collapsing.
- Bake the panels from a stiff, low-spread gingerbread recipe and cut them while warm using a paper template
- Let baked pieces dry overnight so they're rigid before you assemble
- Make royal icing as your glue and pipe it thick along every seam
- Assemble walls first, brace them with cans or glasses, and let that base set hard before adding the roof
- Decorate only after the structure is fully dry and load-bearing
Tips
- Royal icing is the secret, not melted sugar caramel which burns fingers and sets too fast to adjust
- Keep a bit of extra icing in a sealed bag so it doesn't crust over mid-build
- If a wall keeps sliding, your icing is too thin or the panel edges aren't square
