Anyone can char a marshmallow; cooking an actual dinner over wood coals is a different skill. Fire gives you no dials, so you learn to control heat by managing coals, distance, and timing. It is one of the oldest human skills and still one of the most satisfying, because the food genuinely tastes different.

  1. Check fire rules for your spot and pick a legal fire ring or pit; gather or buy enough dry wood for at least two hours of burning.
  2. Plan a simple full meal before you go, for example sausages, foil-packet potatoes with onions, and grilled vegetables, and do all chopping at home.
  3. Light the fire 45 to 60 minutes before cooking and let it burn down to a bed of glowing coals; flames are for light, coals are for cooking.
  4. Set up two zones: rake a thick coal bed to one side for searing and keep a thinner layer for gentle cooking.
  5. Cook using a grate, cast iron pan, or foil packets, rotating food often since coal heat is uneven.
  6. Serve everything together and eat it by the fire while it is hot.

Tips

  • Foil packets are nearly impossible to ruin, so make them your first course while you learn the fire.
  • Bring twice the wood you think you need; running out mid-cook is the most common failure.
  • A cheap pair of leather gloves and long tongs save your knuckles.
  • Hardwood makes steady coals; softwood like pine burns fast and can flavor food with resin.
