How to complete The Knife Edge
A sharp knife is safer and far more pleasant than a dull one, and sharpening it yourself means never paying for it again. The skill is mostly about holding a consistent angle and knowing when the edge is actually keen.
- Soak a whetstone 10-15 minutes (for water stones) until bubbles stop rising.
- Set the blade at a steady 15-20 degree angle and push it edge-first across the stone, covering the whole length in even strokes.
- Work one side until you feel a tiny burr along the opposite edge, then flip and repeat to raise the burr on the other side.
- Move to the fine grit and do lighter passes to polish the edge and remove the burr.
- Finish on a honing rod or strop to align the edge, then rinse and dry the blade.
Tips
- A honing rod realigns an edge between sharpenings but does not sharpen; the stone removes metal.
- Test sharpness on paper or a tomato, not your thumb across the edge.
- Consistency of angle matters more than pressure; let the stone do the cutting.
