  1. Dial in the grind: aim for a roughly 1:2 ratio (e.g. 18g in, 36g out) in 25 to 30 seconds, adjusting grind finer if too fast.
  2. Distribute and tamp the grounds level and firm so water flows evenly through the puck.
  3. Steam milk by introducing a little air at the start for stretch, then submerging the wand to create a smooth, glossy microfoam.
  4. Tap and swirl the pitcher until the milk looks like wet paint with no big bubbles.
  5. Pour from height to combine, then drop the pitcher close to the surface and pour through to form a heart or rosetta.
