How to complete The Fermenter
Lacto-fermentation lets wild or cultured microbes transform raw vegetables into something tangy, fizzy, and probiotic-rich with almost no equipment. Pulling off one batch teaches you that salt concentration and patience, not luck, are what keep the good bacteria in and the rot out.
- Pick one project: salt-brined cucumber pickles and kimchi are far more forgiving for a first try than kombucha, which needs a live SCOBY.
- For vegetables, weigh them and use 2 to 3 percent of that weight in non-iodized salt; dissolve in water for a brine or massage directly into shredded cabbage.
- Pack tightly into a clean jar and keep everything submerged below the brine using a weight or a cabbage-leaf cap; exposed bits mold.
- Ferment at room temperature out of direct sun, burping the jar daily, and taste from day 3 onward until the sourness is right.
- Move the jar to the fridge once you like the flavor to slow fermentation to a crawl.
Tips
- Cloudy brine and a sour smell are normal; fuzzy mold or a rotten smell means dump it and restart.
- Use filtered or dechlorinated water, since chlorine can stall the bacteria you want.
- Warmer rooms ferment faster, so taste sooner in summer than in winter.
