  3. Confirm the dress code and tasting-menu format, and flag dietary restrictions or allergies when you reserve, not on arrival.
  4. Go hungry and unhurried: a full tasting menu can run three hours, so clear the evening.
  5. Consider the wine or non-alcoholic pairing to experience the kitchen's intended progression.

  • Lunch service is often cheaper and easier to book than dinner for the same kitchen.
